An entrepreneur Michael Salvatore, 44, founder of Heritage Hospitality Group, used to pull cost-of-goods reports only once or twice a year for his two cafés, two bars, and bicycle shop. He spent hours manually calculating potential price adjustments based on the cost of raw materials.

  3. Exports sales data from his point-of-sale system and financials from QuickBooks.
  4. Feeds both data sets into Google NotebookLM.
  5. Receives an audio podcast from NotebookLM summarizing business performance and improvement ideas.
  6. Shares the podcast with managers to keep everyone aligned.

With AI streamlining operations, Michael now needs only one bar manager instead of two and chose not to replace the event planner who left earlier this year.

Even a 1–2% reduction in waste, combined with better price adjustments, can generate an additional $15,000–$30,000 per year for a business of his size.

Overall, we estimate that Michael’s new AI-powered workflow is likely saving his company over $100,000 annually.
